From green to Green : A Chronicle of Building a Green Restaurant

About this project

The Project: We are building a farm to fork focused restaurant celebrating slow food, local sourcing and green design. As a part of this effort, we wish to construct a greenhouse and to write a book about what we learn in the process; including recipes, photos, wisdom & resources gained along the way. We feel that you can't get much more local than your own greenhouse, which can supply many of the herbs, greens and other treats for our food and drink. We plan to blog & photograph as the project unfolds, sharing what we learn as we go. The hope is that we can encourage other city folk to delve into growing their own fruits and veggies and give them some suggestions on how to do it and what to do with the end product via recipes. This will all come together at the end of year one in a bound book which brings it all together.

John & I are both city kids with an equal love for city and countryside. We are committed to supporting local, organic and sustainable product in a green environment. With grandparents who farmed in Croatia, Ireland and South Dakota, we feel that it is our legacy to bring a little of that past into our community. We also wish to blend town & country celebrating the art, music and design that are integral to an urban life with the common sense approach to food & drink that is so essential to country living.

Funding: The funds that we raise will be used to build the greenhouse and print the book (you can get an e-book if you prefer to save the paper). Any funds we raise over this amount will be put into the further greening of the restaurant & garden which would also be most awesome to have the ability to do!
